Twelve dairy farmers from the Kleinwalsertal region have begun delivering hay milk to the Schönegger Käse-Alm in Prem, with an annual delivery expected to reach 700,000 kg. This initiative by the Kleinwalsertal dairy cooperative aims to support the hay industry and is pleased to use hay milk, a high-quality product not involving fermented feed, for cheese making. This results in cheese specialties that do not require preservatives or intensive mechanical processing. The biodiversity of the meadows and the animal welfare conditions in the Kleinwalsertal region ensure the quality of the hay milk. The Schönegger Käse-Alm sources milk from various areas, including Upper Bavaria, Allgäu, and Austrian regions.
