The National Institute of Quality (Inacal) in Peru has approved a new technical standard, NTP 012.803:2022, for the quality of fresh peppers. This standard aims to enhance the commercial value of peppers, benefiting over 11,000 farming families and increasing Peru's pepper export potential. The standards outline various quality criteria, including the peppers being whole, clean, healthy, fresh, and free from foreign substances. They must also maintain the expected color, shape, flavor, and smell for their specific variety. The standard also covers microbiological requirements, sampling techniques, contaminants, pesticide residues, heavy metals, hygiene, and container conditions.
