Iran is the world's leading producer of saffron, accounting for over 90% of the global supply, with 80% of this being exported. Despite this, Iran's global market share of saffron is low due to the practice of many of its customers reexporting the spice after repackaging it. The main cities of saffron production are in the Khorasan Razavi Province, with Torbat-e Heydariyeh being the global capital. The UAE, Spain, and China are the primary importers of Iranian saffron.
