Buffalo yogurt is a significant source of income for farmers in the Pazar district of Tokat, Anatolian city. The number of buffaloes in the village has increased from 200 thousand to over 11 thousand in 10 years, thanks to the Ministry of Agriculture and Forestry's "Buffalo Breeding Project in the Hands of the People." Over half of the village's 70 households relies on water buffalo for their livelihood. Demand for buffalo breeding is on the rise, with buffalo yogurt being known for its health benefits. A liter of buffalo milk is equivalent to four liters of cow's milk, making it a more efficient and preferred option, especially for those with cholesterol and diabetes.
