Périgord walnut oil, renowned for its unique flavor and aroma, has been granted both Controlled Designation of Origin (AOC) in 2019 and Protected Designation of Origin (PDO) in 2021. This premium oil is produced through a traditional method involving a first pressing and mechanical process, using only high-quality walnut kernels from local varieties. The oil's distinct taste is attributed to the specific production techniques and the climatic conditions in the area, which includes five departments in southwestern France. With around 1,000 walnut producers and covering 9,000 hectares, the region has the potential to produce up to 50,000 liters of AOC oil, celebrating the rich heritage and expertise in walnut oil production.
