Pitinata is a rare and ancient meat delicacy from the Tramontina Valley in Friuli, Northern Italy. It is a salami without a casing, shaped like a small meatloaf weighing about 200 grams, prepared from finely ground meat (traditionally game, sheep, or goat), flavored with mountain herbs, informs Gambero Rosso.
