In 2020, Germany saw a nearly 10% increase in mushroom production, reaching 77,000 tons from holdings of at least 0.1 ha, as per the Federal Statistical Office. The total edible mushroom harvest was 78,700 tons, with 98% being mushrooms and the rest being oyster mushrooms, shiitake, and other special cultures. The harvest area for edible mushrooms increased by 4% to 358 ha, with 16% being organically farmed. Large-scale production of edible mushrooms occurs in nine federal states, with Lower Saxony and North Rhine-Westphalia being the leading states.
