Despite the additional costs and complexity of accessing the EU market post-Brexit, Scotland's red meat exports are predominantly to EU countries, contributing to around 93% of total export revenues, with Scotch Lamb making up nearly all of that. However, sales to non-EU markets like Hong Kong, Japan, and Canada have also increased. The export markets are crucial for balancing carcase and revenue, with Scotland's processing sector having thin operating margins. Beef sales generated nearly £53m, with a significant portion going to Italy, France, and The Netherlands, while lamb exports, despite domestic supply constraints, brought in an estimated £20m, with France being the primary market. Sales of co-products also played a key role in carcase balance, contributing to nearly 90% of offal sales being from cattle, with France, the Irish Republic, Poland, and Germany being significant markets.
