South Korea is facing a crisis with the production of agricultural goods used in making kimchi, as the cultivation area for key ingredients like cabbage, radish, red pepper, and garlic has significantly decreased. This has led to a drop in production and self-sufficiency rates, and an increase in imports of Chinese kimchi and frozen peppers and garlic. The Korea Rural Economic Institute highlights the decline in cabbage cultivation area by 46% and radish by 94% over the past 20 years. The surge in imports of these products, alongside consumer preferences shifting towards domestic kimchi and concerns over its safety, further exacerbates the issue. Experts emphasize the need for immediate measures to address the decrease in kimchi production raw materials.
