The Spanish Serrano Ham Consortium (CJSE) has seen significant growth in 2023, with increases in sealed pieces of 31.03% in February, and over 33% in June and July. The consortium's quality seal is now recognized in over 65 international markets, accounting for around 60% of cured ham production and 65% of exports in value. The CJSE is also working with ICEX on a sector plan targeting strategic markets such as France, the US, Mexico, and the UK, and is continuing its promotional campaign in Australia in partnership with the Consorzio del Prosciutto di Parma.
