The modifications introduced in the specifications outline the admission of pigs with 50% Iberian breed crossed with Duroc pigs: "The animals suitable for the production of hams and shoulders protected by this denomination will be of the Iberian pig breed or its crosses with the Duroc breed authorized by national legislation, ensuring a minimum of 50% Iberian breed."
The following optional mentions are also included:
Selection: for hams between 1250 and 1500 days of elaboration and shoulders between 780 and 960 days of elaboration.
Great selection: for hams with more than 1500 days of elaboration and shoulders with more than 960 days of elaboration.
Finally, a minimum elaboration period at the time of classification of 1000 days for the hams and 600 days for the shoulders is incorporated.
After the resolution is published in the BOE, a period of 1 month opens for the submission of proposals for amendment or opposition.
