The Spanish Serrano Ham Consortium has reported a record breakout in cured ham exports, with a 12.08% increase in value and a 1.24% increase in volume by the third quarter of 2024, amounting to over €514 million and 54,830.50 tonnes. The European Union continues to be the primary market, contributing to 68.5% of the total exports, while third countries like Mexico, Colombia, and Brazil have experienced significant growth, accounting for 31.5% of the exports. The United Kingdom stands out with the highest price per kilo at €17.28/kg, followed by China and Australia. The preference among consumers has shifted towards boneless ham, which constitutes 84.56% of the exports, marking a significant increase in both volume and value, whereas bone-in ham has seen a decline.
