In the village of Kaynaca in Niğde, tomatoes drying under the sun are adding flavor to world cuisine. The harvest of tomatoes, which producers in Niğde have cultivated with great effort, is complete. While some of the produce is considered for table use and paste, a significant portion is set aside for drying. Some of the dried tomatoes are sent across Turkey, while the majority is exported to European countries, Russia, and America. In the facility where approximately 8,000 tons of fresh tomatoes are dried, 70-80 people are involved in the cutting process, and 150 people are involved in the harvesting process. The drying period, which varies between 7 to 10 days depending on weather conditions, sees the tomatoes being sent to European countries, Russia, and America.
