In 2023, frozen surimi production in Japan's Hokkaido region fell by 30%, with the five main facilities producing only 7,100 metric tons. The end-of-year inventory was 892 metric tons, primarily composed of Alaska pollock. This continues a trend of declining domestic pollock surimi production in Japan, particularly in Hokkaido, which has been ongoing since the 1990s and hit a record low in 2018 with 29,600 metric tons.
