Rich in antioxidants, elderberry is widely used for boosting the immune system and as a natural remedy for colds and flu. The U.S. leads in elderberry production, primarily in Missouri, with the market dominated by European elderberries. The demand for elderberry has experienced a notable increase since 2018 due to its health benefits and the rise in veganism and healthy eating trends. Despite these market dynamics, the potential of elderberry in Eastern Europe and Central Asia, including Ukraine, remains under-exploited due to logistical challenges and a lack of industrial cultivation. Currently, Ukraine exports a limited amount of wild elderberries to Europe and Japan.
