The article provides an overview of the caviar market in Ukraine, with a focus on the pricing and availability of salmon and catfish caviar, and trout caviar imported from Europe and North America. The price of these caviar types is largely determined by the exchange rate between the dollar and the hryvnia, with salmon and catfish caviar costing between 1,800 to 2,400 UAH per kilogram. The reduced number of fish for spawning has led to an increase in these prices. In contrast, trout caviar, which is farmed, may be cheaper due to the impact of the coronavirus on the European restaurant and hotel industry. Belarus, the United States, and Norway are the leading suppliers of red caviar, accounting for 49%, 10%, and 14% of imports, respectively, in 2019.
