The consumption of alternative products like plant-based meat and milk substitutes has gradually increased, with an estimated 30% of the population now willing to consume them. The sale of artificial meat in Russia is still uncertain due to the need for further study on its consequences, and the development of the smart food sector has been affected by sanctions that blocked access to technological solutions and ingredients.
