The stems and leaves of the Chinese water chestnuts have withered, marking the appropriate time for harvesting. Chinese water chestnuts are mainly cultivated in paddy fields with water; after harvesting the single-crop rice, seedlings are planted in August. After the leaves begin to wither due to frost, the water at the base is drained and they are dried, followed by harvesting from early December to January. However, as all the work must be done by hand, this labor-intensive crop is facing a crisis of collapsing production base.
