Many times Argentine producers complain about the multiple regulations of the States on their lives without realizing that in other parts of the world these interventions can be much more demanding than here. A good example occurred this Thursday in the old continent, where the authorities of the European Union (EU) go so far as to define even the diameter of a blood sausage.
The diameter of a blood sausage? Yes, the diameter of a blood sausage.
The Spanish agency EFE reports that in the Official Journal of the European Union, a modification of the regulation was published this Thursday that recognized in 2018 as a Protected Geographical Indication (PGI) the popular blood sausage from Burgos.
The Burgos blood sausage is a sausage based on rice and pork blood typical of the gastronomy of that area of Spain. It also contains onion, pork lard, salt, pepper, paprika, oregano, and other spices. Oral tradition says it must be "bland, fatty, and spicy".
