The cultivation of amaranth is rapidly expanding in Ukraine, with the market for amaranth and its products growing by about 11% annually, outpacing traditional crops like corn, soybeans, and wheat. Oleksandr Duda, head of the Association of Amaranth and Amaranth Products Producers, forecasts that Ukraine will become a global leader in amaranth cultivation within five years. Despite a slight slowdown in 2022-2023, a significant increase in acreage is expected this year, with 90% of the amaranth being organically grown. Amaranth is versatile, used in products ranging from flour and oil to pharmaceuticals and cosmetics, with ongoing research into new applications like a vegetable milk substitute.
