This method allows the lemons to retain their moisture and maintain their quality. Approximately 5,000 tons of lemons are processed annually in the region, with an estimated 150,000 tons stored. The process involves sorting, washing, baking, and exporting only the undamaged fruits, resulting in a low waste rate of around 15 percent.
