The sun-drying process, which involves separating the tomatoes and leaving them in the sun for a week, allows the product to be exported to over 60 countries. The procedure is challenging due to the need for specific conditions such as sunlight angle, wind rate, and humidity. Once dried, the tomatoes are valued at 3.5 Euros in the international market, a significant increase from the 30-40 cents earned for field tomatoes. These dried tomatoes are essential in various cuisines, including Italian pizzas and American hamburgers.
