Ukraine's cabbage market is witnessing a shift as demand for non-traditional cabbage varieties like cauliflower, broccoli, Brussels sprouts, and savoy cabbage is on the rise in favor of healthy eating trends and catering demands. These alternatives collectively account for about 25% of the market, with broccoli and cauliflower being the most popular. This shift has caused a significant increase in prices for all cabbage types, including a tripling of kale prices, a 20-25% rise in broccoli and cauliflower prices, and an average cabbage price of UAH 21/kg, a significant increase from the previous year. The price hike is attributed to high production costs, increased demand for dietary nutrition, and various influencing factors such as climatic conditions, rising energy and logistics costs, and import activities.
