In 2023, Bulgaria's dairy processing industry saw a 3.3% increase in the processing of raw milk, totaling 712,975 thousand liters. This was driven by a 1% increase in domestic raw milk and a 68.5% increase in imported raw milk, although the latter only accounted for 5.5% of the total. The most significant increase was in the processing of sheep's milk, followed by cow and goat milk, while buffalo and mixed milk saw a decrease. However, the production of various dairy products saw mixed results, with a decrease in the production of more expensive products like butter, milk fat, and cheeses from sheep, goat, buffalo, and mixed milk, and an increase in the production of fermented milks, dairy desserts, cream, and fresh packaged milks. This shift is likely due to a redirection of consumers towards imitation products due to the high price of cow's milk cheeses.
