Within the framework of the celebrations for National Pisco Sour Day, the Ministry of Production (Produce) highlighted the success story of Bodega Nyrla Lévano, a family-run business from Ica that has managed to transform traditional pisco production into an innovative, sustainable, and digitized business model. Through the ProInnóvate program, this Ica winery has managed to repurpose distillation waste to create new products, demonstrating that the pisco tradition can evolve towards a circular economy. With the support of Produce, the company developed EcoSafe, a 70° disinfectant alcohol made from the "heads" and "tails" (waste) generated during the distillation of pisco. "During the pandemic, we continued operating and developed EcoSafe, a liquid and gel alcohol.
