San Pedro's sweet potato production is one of the most important hubs in the country for this tuber. Driven by a strong historical and cultural component, more than merely climatic, this region concentrates 20% of the national surface area and annually dedicates around 2000 hectares among all the family farms and fields in that northern Buenos Aires region. Although they are considered "sister crops" in the popular imagination, the truth is that there are not only productive and management differences between the sweet potato and the potato, but even plain differences: the former is a root, and the latter a tuberous stem.
