In 2021, Germany saw a 5% increase in mushroom production, with a total harvest of over 81,000 tons. Nearly all of the production (97%) was button mushrooms, while the remaining 3,800 tons were oyster mushrooms, shiitake, and other special cultures. Almost 11% of this production was done organically. The majority of the production took place in Lower Saxony and North Rhine-Westphalia, with 13% of the harvest area farmed organically.
