Puno: Producers boost black quinoa by transforming it into artisanal panettone and cake

Producers from the town of Culta, in the district of Ácora, Puno province and region, are strengthening the added value of Andean grains after being trained in the preparation of artisanal panettones and cakes made from black quinoa. This training was developed by the Regional Directorate of Production (Direpro) Puno through a practical course aimed at improving their productive capabilities. During the session, participants learned techniques for preparing panettones and cakes with black quinoa, including fermentation, kneading, baking, decoration, and the proper handling of ingredients. Additionally, quality control, recipe standardization, and production times were reinforced, ensuring that the products maintain their nutritional value and meet higher standards.
