The TanukiFamily restaurant chain has successfully transitioned to using local fish supplies from Murmansk, covering 100% of its salmon needs and enhancing the ability to trace the product's origin, which has significantly reduced its reliance on foreign suppliers. This shift reflects a broader trend in the Russian salmon market, which has seen a 15% increase in volume in 2023 and a reduction in import dependency from over 90% in 2018 to 55% in 2023, driven by domestic production and changes in supply chains, particularly after the Faroe Islands ceased supplying fish to Russia in 2022. The trout market in Russia is also growing, with a decreasing trend in import share. Despite occasional supply disruptions, imported salmon, including a hybrid species known for its rapid growth, continues to be used in Russia, sourced from places like the Faroe Islands and Chile. The Fisheries Union anticipates stable or slightly increased production levels for salmon and trout in 2024, indicating ongoing investment in aquaculture within Russia.
