The Regulatory Council of the Teruel Ham and Shoulder Denomination of Origin celebrated its fortieth anniversary with technical conferences aimed at improving the product's quality. The conferences discussed the reform of European regulations on animal welfare, emphasizing the need for sustainability in the sector. Miguel Ángel Higuera, director of Anprogapor, stressed the importance of balancing animal welfare with other policies for economic sustainability. Pedro José Moreno from Covap presented an integrated model of sustainable production, and Meat products expert Jacint Arnau provided insights into preventing stains and mold on ham, emphasizing the need for personalized care for each ham.
