Ligurian olives Taggiasca and Trentino Carne Salada have officially received protected geographical indication (PGI) recognition. "Italy has once again proven that quality, tradition, and the connection with the local area are the true competitive strength of our agriculture," said Francesco Lollobrigida, Minister of Agriculture, Food Sovereignty, and Forestry. What is "Carne Salada"? "Carne Salada" literally means "salted meat." It is a traditional specialty from the Trentino region—cured beef that is salted and seasoned with spices (bay leaf, rosemary, juniper, and black pepper).
