The demand for amaranth is increasing in Europe, but the supply is not keeping up, leading to high export prices. Ukrainian producers are struggling with logistical issues that are preventing them from being seen as reliable partners in Europe. Despite the challenges, the cultivation of amaranth is growing in regions such as Dnipropetrovsk, Zhytomyr, Chernihiv, Poltava, and Kharkiv, with small farmers mainly responsible for its production.
