Trabzon's pita, synonymous with the Black Sea, has taken on a very different flavor when paired with apples. Pita master Abdulkadir Bektaş recalled that they had previously combined the region's iconic flavors, anchovies and kuymak, with pita, and now they have embarked on an extraordinary project by making pita with Trabzon's geographically marked Yomra apple. Bektaş, who has been in the family business for nearly 40 years, supported Yomra Municipality's social responsibility project by reinterpreting a local flavor. Noting that they are constantly innovating, Bektaş said, "We have been in the family business since 1984. We are pita makers, but we are always in the pursuit of research and innovation.
