Trabzon's pita, synonymous with the Black Sea, has taken on a very different flavor when paired with apples. Pita master Abdulkadir Bektaş recalled that they had previously combined the region's iconic flavors, anchovies and kuymak, with pita, and now they have embarked on an extraordinary project by making pita with Trabzon's geographically marked Yomra apple.
