The USDA has lowered its outlook for U.S. milk production next year due to dairy farmers focusing on producing butter and cheese instead of beverage milk. Consumer preference for dairy products over beverage milk, as well as a renewed popularity of butterfat products, has led to farmers feeding their cows in a way that produces more butterfat and less drinkable milk.
