Vietnam star anise is grown almost exclusively in Lang Son province by farmers from ethnic minority communities in northern highland areas.
The fruits are harvested before they ripen, then sun dried. There are 2 crops of star anise (spring and autumn).
The autumn harvest starts in September and lasts until the end of October each year. This crop gives more flowers. The fruit is picked and dried under temperatures between 30 to 40 degrees Celsius. The color changes from red brown to dark brown, forming star-shapes and exposing shiny yellow brown seeds.
Spring harvest starts in March till the end of April. Star anise flowers of this season are not better than autumn crop. Star- shaped anises are smaller than the autumn crop.
A plantation agriculture model is utilised.

Star anise is the seed pod from the fruit of the Illicium verum plant, an evergreen shrub native to Southwest China. The star anise pod, which is shaped like a star (hence its name), has an average of eight points, each containing a single pea-sized seed. Star anise is rich in a variety of flavonoids and polyphenolic compounds that may contribute to its medicinal capacity.
Song Duong International Company Limited offers Whole Star Aniseed of Vietnamese origin. Both the seeds and the pod are used in cooking and contain the sweet, potent anise flavour. Whole star anise will remain fresh and vibrantly flavoured for about one year. The spice is produced using conventional cultivation methods. Samples are available upon request.
