Within those classifications, there are over 30 almond varieties. The most popular varieties are Nonpareil, Carmel, Monterey, Butte, Padre, Mission, and Sonora.
Almonds are sold either in-shell or shelled and shelled almonds can be sold whole or further processed as blanched, sliced, slivered, diced, or as meal, flour, butter, paste, or oil. Nearly 70% of exported almonds are sold shelled, 22% in-shell, and the remainder processed in some form.
