California is the largest producer of almonds, growing approximately 80% of the world's supply. Almonds are California's top agricultural export, ranking as the largest U.S. specialty crop for exports.
Approximately 90 percent of almond production in California falls into the following three major classifications: Nonpareil, California, and Mission. Within those classifications, there are over 30 almond varieties. The most popular varieties are Nonpareil, Carmel, Monterey, Butte, Padre, Mission, and Sonora.
Almonds are sold either in-shell or shelled and shelled almonds can be sold whole or further processed as blanched, sliced, slivered, diced, or as meal, flour, butter, paste, or oil. Nearly 70% of exported almonds are sold shelled, 22% in-shell, and the remainder processed in some form.
USDA grades are US Fancy, Extra No 1, U.S. No. 1 (Supreme), Select Sheller Run (SSR), and Standard Sheller Run (STD), US No 1 Wholes & Broken, US No 1 Pieces
