Our Macadamia Nuts from Kenya
Tridge’s Macadamia Nuts are sustainably sourced from over 5000 smallholder farmers. They are freshly harvested and processed under the guidelines of FSSC 22000 food safety systems to assure top-quality macadamia kernels. The production process includes sourcing and quality analysis, drying, grading, cracking, shell separation, sorting, grading, vacuum packing, cartooning, and warehousing.
The nuts are vacuum packed in 25 pounds of food-grade aluminum dosed with nitrogen, sealed, then cartooned, and is chilled to 12-14 degrees Celsius. Tridge specializes in supplying excellent halal quality Macadamia Nuts directly from processing plants.
The processing techniques involve Silo drying, machine cracking, grading, and packing. The quality assurance procedure for our Macadamia Nuts starts during the purchase of raw materials.
Parameters of inspection include:
- Insect damage, Immaturity, Mould, size, and moisture content. Verification of moisture during drying and before release to cracking.
- Sorting, online analysis for verification of quality (% of insect damage, mold, colored and immature and Wholes to halves ratio) and moisture, packing verify deflated pouches for repacking.
Our suppliers have quality and safety manuals in place and a food safety policy that is also well communicated. Apart from that they have in place the HACCP Plan, the Threat Assessment Plan (TACCP) the Prerequisite Programs, the cleaning, sanitation and environmental monitoring, standard operating procedures, and work instructions.
