Alva Egoh is an Italian company that provides its customers with a variety of tuna pieces (ventresca, fillets, bottarga, mosciame, lattume, heart, buzzonaglia) that can be used both cooked and raw for meals like sushi and sashimi. The tuna is then packaged, usually in metal cans or glass jars, and preserved, either in oil or naturally (in salty water).
