Australia has seen a significant increase in average cattle carcase weights, rising by 30% since 2003, with Queensland cattle being the heaviest. Male carcase weights have remained stable at 347.7kg/head, while female weights have increased by 38.5kg since 2013. This trend is expected to ease due to the anticipated El Niño weather event and a higher proportion of grassfed cattle. The goat industry has also benefited from improved carcase weights and supply consistency, leading to a record goat production of 8,377 tonnes carcase weight in Q4 2022 and a record 36,610 head processed in March 2022.
