The war in Iran leaves no respite even for saffron. Yet it is not all lost: just remember that we produce it too. The war in Iran is much broader in scope than expected, or at least what Trump and Netanyahu imagined. In particular, the Strait of Hormuz has unfortunately become the center of current geopolitical tensions, as well as the concerns of all of us consumers about prices and availability of goods. Among these is saffron, the symbol spice of Persian cuisine and Iran’s flagship product, which alone produces almost the entire global supply. Like many other raw materials, saffron is also at risk. Doing some calculations, it turns out that in Italy we have supplies for six months. After that, we can say goodbye to yellow risotto, and many other preparations in which the spice literally makes the ingredients shine. But is it really like that?
