The ongoing war in Ukraine has significantly impacted the prices of ingredients for borscht, a traditional dish. The occupation of southern regions, previously major vegetable suppliers, has led to a price increase for most vegetables in the 'borscht set', with potatoes seeing a 3.5 times increase within a year. However, onions and carrots have become cheaper. This situation has also encouraged other regions to develop their vegetable sector. Scientists predict a slight increase in vegetable prices by the end of winter 2024, with onions expected to see the highest increase due to high demand and limited supply.
