The 'La Carolina' ranch, owned by Jorge Priego Noguera, has shifted its focus from traditional cattle farming to buffalo rearing since 2014, introducing a new form of livestock production in Mexico. Starting with just three females and a stallion, the farm has grown to house 500 buffalo, accounting for 90% of its herd. Buffalo are known for their adaptability to various feeding conditions and Mexican climate, requiring less maintenance than cattle. They produce more milk, which is sold for higher prices, allowing for increased cheese production and nutrition. The meat is lean and nutritiously rich, with buffalo reaching slaughter weight in about 28 months. The ranch also sells live animals in various states of Mexico, tapping into a lucrative market. The young Priego García emphasizes the potential of buffalo farming in Mexico, given the country's vast flooded pastures, and encourages new generations of ranchers to embrace the industry for its profitability and environmental efficiency.
