The USDA's annual dairy product report has shown a mixed trend in the dairy industry for the past year. Highlights include a decrease in butter and powder products such as nonfat dry milk and skim milk powder, with butter production slightly down and California being the main producer. In contrast, cheese production saw an increase, with Wisconsin being the largest producer and both Italian and American cheese accounting for slightly over 40% of the production. The report also noted a rise in dry whey production and a slight decrease in lactose. Additionally, there was an increase in the production of regular ice cream by 4.5%, but a decrease in low fat ice cream by 6.5%. Frozen yogurt production also saw an increase of nearly 13%.
