The Central Statistics Office (CSO) reports a 10.8% increase in sheep slaughterings in January 2023 compared to the same period in 2022, with a total of 251,300 sheep processed. This is part of a larger trend, with nearly 3.2 million sheep slaughtered in 2022, up from 2.97 million in 2021. There was also a 6.7% increase in cattle slaughterings and a slight 0.2% increase in pig slaughterings. Meanwhile, the Department of Agriculture, Food and the Marine (DAFM) confirmed that 12,582 cattle were slaughtered in Ireland within a week of being sold at a mart in January 2023.
