The Spanish Serrano Ham Consortium has reported a 2% decrease in exports and a 1.9% decrease in export value in the first quarter of 2021, compared to the same period in 2020. Despite this, the average price of a kilogram of ham increased slightly to 9.8 euros. The European Union accounted for 77.4% of cured ham exports, while third countries made up 22.6%. Chile and China saw the most significant growth in terms of value. The format of the exports also saw changes, with a decrease in value for bone-in ham but an increase in volume, and a decrease in volume and value for boneless ham.
