From January to June 2022, Spain experienced a 14.49% increase in cured ham and shoulder exports, totaling 25,126.90 tons, compared to the same period in 2021. The export value reached 257,930,000.42 euros, marking an 18.94% increase, with the average price per kilo of ham rising by 3.89% to 10.27 euros. The European Union accounted for 70.1% of these exports, while Third Countries like Japan, the US, China, and Mexico contributed to 29.9%. The bone-in format saw a 19.52% increase in export volume and a 12.29% increase in value, with Denmark, the UK, and the Netherlands noting the highest average price increases. China emerged as the market with the highest proportion of bone-in ham imports. This growth in cured ham exports represents a tangible recovery following the pandemic, fueled by increasing demand in both traditional and emerging markets.
