A study conducted by researchers at Huazhong Agricultural University in China has found that households in urban areas consume more seaweed than those in rural areas. The research, published in the Foods journals, also revealed that individuals with higher dietary knowledge tend to consume more seaweed. Factors such as age, work status, and household income also impact seaweed consumption. As China undergoes rapid urbanisation, demand for seaweed is expected to rise, posing challenges for domestic farming and international markets. The researchers suggest that future studies should update data to investigate the recent trend of seaweed consumption in China and consider the safety regulation of edible seaweed due to ocean pollution.
