The Dzhankoy plant 'Novator', the region's largest dairy producer, has seen a 14% rise in cheese production over the past two years, thanks to new facilities and the expansion of cheese varieties. Currently, the plant produces a diverse range of cheeses, including versions inspired by different geographical origins. However, the expansion is being limited by a severe raw material shortage, primarily milk, due to decreased production in the Crimean farms.
