In 2021, Manchego cheese production surpassed its previous record, reaching 17.1 million kilograms. This success is coupled with a 23% increase in milk price for farmers from the previous year. Francisco Martínez Arroyo, the Minister of Agriculture, praised the industry's contribution to the region and highlighted the unique nature of Manchego cheese, made exclusively from Manchego sheep milk. A Strategic Plan for the cheese's Protected Designation of Origin is under development, with a focus on supporting La Mancha sheep farmers and promoting generational change. The United States leads the list of international consumers, with 70% of the production being exported mainly to Europe.
