Nigerian sweet potato growers are planning to increase production due to interest from puree processors and bread bakers in industrializing the root crop. The Association of Master Bakers and Caterers of Nigeria has started using bio-enriched Orange-Fleshed Sweet Potato (OFSP) in bread and other products to offset the cost of increasing raw material prices. The bakers have found that bread with 20% OFSP puree has good color, texture, and taste.
